Butterscotch Pumpkin Cake

- 2 cups flour
- 1-2/3 cups sugar
- 1 tbsp. baking powder
- 1-1/2 tsp cinnamon
- 1 tsp salt
- 1/2 tsp ground nutmeg
- 1 cup butterscotch morsels
- 1 cup canned pumpkin
- 1/2 cup vegetable oil
- 3 eggs
- 1 tsp vanilla extract
- ----------
- Glaze:
- 1/3 cup evaporated milk
- 1 cup butterscotch morsels
Instructions
- In a medium bowl combine flour, sugar, baking powder, cinnamon, salt and nutmeg
- Melt the 1 cup of butterscotch morsels in the microwave
- In a different bowl, combine pumpkin, oil, eggs & vanilla extract
- Add melted butterscotch morsels; then add dry ingredients
- Spoon into a greased 10" fluted pan; bake 40-50 minutes at 350F; cool for 30 minutes and then transfer to plate
- (If it makes it this far you can add an icing to it, or dust with powdered sugar....but ours never makes it to this stage... LOL)
- Glaze:Combine milk and butterscotch morsels, heat until melted. Cool and drizzle over cake slices.
