    Pecan Pie from Dear Abby

    List of Ingredients


    • 1 cup light corn syrup
    • 1 cup dark brown sugar
    • 1/3 cup melted butter
    • 1 tsp. vanilla extract
    • 1/2 tsp. salt
    • 3 eggs, slightly beaten
    • 1¼ cups pecan halves
    • unbaked pie shell for 9" pie


    Instructions


    1. Combine syrup, sugar, butter, vanilla and salt; mix well.

    2. Add eggs and mix well.

    3. Place pecans in pie shell and pour mixture over.

    4. Bake 55-60 minutes at 325°, or until knife blade inserted halfway between center and outside edge comes out clean.



    Final Comments


    For a larger pie:
    º 1 cup light corn syrup
    º 1 cup brown sugar
    º 1/2 cup melted butter
    º 1 tsp. vanilla extract
    º 1/2 tsp. salt
    º 4 jumbo eggs, slightly beaten
    º 1½ cups pecan halves

    Follow directions as above.



    If necessary to prevent over-browning of crust, make a shield of aluminum foil around the outside of the pie pan or use the pie shields made especially for this purpose.
