Pecan Pie from Dear Abby

List of Ingredients
- 1 cup light corn syrup
- 1 cup dark brown sugar
- 1/3 cup melted butter
- 1 tsp. vanilla extract
- 1/2 tsp. salt
- 3 eggs, slightly beaten
- 1¼ cups pecan halves
- unbaked pie shell for 9" pie
Instructions
- Combine syrup, sugar, butter, vanilla and salt; mix well.
- Add eggs and mix well.
- Place pecans in pie shell and pour mixture over.
- Bake 55-60 minutes at 325°, or until knife blade inserted halfway between center and outside edge comes out clean.
Final Comments
For a larger pie:
º 1 cup light corn syrup
º 1 cup brown sugar
º 1/2 cup melted butter
º 1 tsp. vanilla extract
º 1/2 tsp. salt
º 4 jumbo eggs, slightly beaten
º 1½ cups pecan halves
Follow directions as above.
If necessary to prevent over-browning of crust, make a shield of aluminum foil around the outside of the pie pan or use the pie shields made especially for this purpose.
