    Texas Chocolate Cake

    List of Ingredients


    • CAKE:
    • 2 cups flour
    • 2 cups sugar
    • 2 sticks butter
    • 3 tbsp. cocoa
    • 1 cup water
    • 2 eggs
    • 1 tsp. baking soda
    • 1/2 cup buttermilk
    • 1/2 tsp. salt
    • 1 tsp. cinnamon
    • .1 tsp. vanilla extract
    • ICING:
    • 1 stick butter
    • 4 tbsp. cocoa
    • 6 tbsp. buttermilk
    • 1 pound powdered sugar
    • 1 tsp. vanilla
    • 2/3 c. chopped pecans or 1/2 cup crushed Missouri black walnuts (optional)


    Instructions


    1. Combine flour and sugar, set aside.

    2. Combine butter, cocoa and water, bring to boiling and pour over flour & sugar, mixing well.

    3. Add eggs, baking soda, buttermilk, salt & vanilla, mixing well.

    4. Pour into jellyroll pan and bake 20-25 minutes at 350F. (a jellyroll pan is 17-1/2" x 12-1/2" x 1" deep)

    5. In the meantime, combine butter, cocoa and buttermilk for icing

    6. Bring to boiling and beat in powdered sugar.

    7. When cake is baked, spread icing over hot cake.

    8. Allow to cool before serving.



    Final Comments


    Note from Marge: Add 1/2 cup crushed Missouri black walnuts to the icing!!
