Texas Chocolate Cake

- CAKE:
- 2 cups flour
- 2 cups sugar
- 2 sticks butter
- 3 tbsp. cocoa
- 1 cup water
- 2 eggs
- 1 tsp. baking soda
- 1/2 cup buttermilk
- 1/2 tsp. salt
- 1 tsp. cinnamon
- .1 tsp. vanilla extract
- ICING:
- 1 stick butter
- 4 tbsp. cocoa
- 6 tbsp. buttermilk
- 1 pound powdered sugar
- 1 tsp. vanilla
- 2/3 c. chopped pecans or 1/2 cup crushed Missouri black walnuts (optional)
Instructions
- Combine flour and sugar, set aside.
- Combine butter, cocoa and water, bring to boiling and pour over flour & sugar, mixing well.
- Add eggs, baking soda, buttermilk, salt & vanilla, mixing well.
- Pour into jellyroll pan and bake 20-25 minutes at 350F. (a jellyroll pan is 17-1/2" x 12-1/2" x 1" deep)
- In the meantime, combine butter, cocoa and buttermilk for icing
- Bring to boiling and beat in powdered sugar.
- When cake is baked, spread icing over hot cake.
- Allow to cool before serving.
Final Comments
Note from Marge: Add 1/2 cup crushed Missouri black walnuts to the icing!!
