Nutty Caramel Corn

- 6 qts. freshly popped corn (about 1 cup unpopped)
- 1 cup pecan halves *
- 1 cup cashews *
- 1 cup butter or margarine
- 2 cups firmly packed brown sugar
- 1 tsp. salt
- 1 tsp. vanilla extract
- 1/2 cup light corn syrup
- 1/2 tsp. baking soda

Instructions
- Combine popped corn & nuts in a large roasting pan; set aside.
- Melt butter in a large saucepan; stir in sugar, syrup & salt.
- Bring to boiling over medium heat, stirring constantly
- Boil over medium-low heat for five minutes without stirring (or until candy thermometer registers 250F.
- Pour over popcorn & nuts; toss to coat.
- Spread onto large rimmed baking sheets and bake for 1 hour, stirring every 15 minutes, until crispy.
- Let cool completely; serve, or store in an airtight container until ready to serve.
