    List of Ingredients


    • 2¼ C all-purpose flour
    • 1/2 tsp baking soda
    • 1/4 tsp salt
    • 1 C quick oats (not instant)
    • 1 C dark brown sugar, packed
    • 1/2 C white sugar
    • 1 C salted butter, softened
    • 2 T honey
    • 2 tsp pure vanilla extract
    • 2 Large eggs, or 3, if eggs are smaller
    • 1½ C raisins (8 oz)
    • ½ C walnuts, chopped (3 oz)


    Instructions


    1. Preheat oven to 300°
    2. In a med bowl combine flour, soda, salt & oats. Mix well with wire whisk and set aside.
    3. In lrg bowl blend sugars with electric mixer set on med speed. Add butter & mix to form a grainy paste. Scrape down sides of bowl, then add honey, vanilla and eggs. Mix on med speed until light & fluffy. Add the flour mix, raisins & walnuts; blend on low speed just til combined. Do not overmix. (May also use food processor and then mix in raisins & nuts by hand.)
    4. Drop by rounded tablespoons (or larger, if desired) onto ungreased cookie sheets, 1½” apart.
    5. Bake for 22-24 minutes, or til cookies are light golden brown & center springs back when touched. Immediately transfer cookies to a cool flat surface or rack.
