    Old-fashioned Stovetop Rice Pudding

    List of Ingredients


    • 2 quarts of milk
    • 1 cup rice
    • 1 cup sugar
    • 2 eggs at room temperature
    • 1 Tbsp. vanilla
    • raisins to taste (optional)
    • cinnamon


    Instructions


    1. Place milk, rice and sugar in pot.
    2. Bring to a boil and simmer until rice is completely cooked (about 20 to 25 minutes)
    3. Beat eggs slightly
    4. Take a little milk and rice mixture from pot and add to beaten eggs - this will temper the eggs
    5. Return eggs to pot and stir constantly til eggs are mixed in well
    6. Add raisins and vanilla
    7. Let pudding cook until it starts to thicken
    8. Remove from heat, allow to cool
    9. Turn into serving bowl & sprinkle with cinnamon
    10. Refrigerate leftovers
