Old-fashioned Stovetop Rice Pudding

List of Ingredients
- 2 quarts of milk
- 1 cup rice
- 1 cup sugar
- 2 eggs at room temperature
- 1 Tbsp. vanilla
- raisins to taste (optional)
- cinnamon
Instructions
- Place milk, rice and sugar in pot.
- Bring to a boil and simmer until rice is completely cooked (about 20 to 25 minutes)
- Beat eggs slightly
- Take a little milk and rice mixture from pot and add to beaten eggs - this will temper the eggs
- Return eggs to pot and stir constantly til eggs are mixed in well
- Add raisins and vanilla
- Let pudding cook until it starts to thicken
- Remove from heat, allow to cool
- Turn into serving bowl & sprinkle with cinnamon
- Refrigerate leftovers
