Shrimp Norfolk

List of Ingredients
- NORFOLK BUTTER:
- 1/4 cup dairy butter, softened
- 2 tsp. chopped fresh basil
- 1 tbsp. chopped fresh parsley
- 2 tsp. white wine vinegar
- 1 tsp. dry bread crumbs
- 1/2 tsp. fresh lemon juice
- 1/4 tsp. ground white pepper
- ----------
- SHRIMP:
- 1 tbsp. dairy butter
- 1 pound fresh peeled shrimp
- 1/4 cup white wine
- one recipe Norfolk butter
- ----------
- GARNISH:
- fresh chopped parsley
- lemon slices
Instructions
- Norfolk Butter: Combine ingredients and beat until smooth. Makes enough for 1 lb. of shrimp or 2 - 3 servings.
- Shrimp: Melt butter in skillet over medium heat. Add shrimp and stir-fry until just pink (1 - 2 minutes); transfer to serving plate and keep warm.
- Add wine to skillet and reduce to 1 tbsp. (3 - 4 minutes); remove from heat and gradually whisk in Norfolk Butter until just incorporated and sauce is slightly thickened. Pour over shrimp, sprinkle with fresh chopped parsley and garnish with lemon slices.
- Serve on a bed of linguini or rice.
