    Shrimp Norfolk

    List of Ingredients


    • NORFOLK BUTTER:
    • 1/4 cup dairy butter, softened
    • 2 tsp. chopped fresh basil
    • 1 tbsp. chopped fresh parsley
    • 2 tsp. white wine vinegar
    • 1 tsp. dry bread crumbs
    • 1/2 tsp. fresh lemon juice
    • 1/4 tsp. ground white pepper
    • ----------
    • SHRIMP:
    • 1 tbsp. dairy butter
    • 1 pound fresh peeled shrimp
    • 1/4 cup white wine
    • one recipe Norfolk butter
    • ----------
    • GARNISH:
    • fresh chopped parsley
    • lemon slices


    Instructions


    1. Norfolk Butter: Combine ingredients and beat until smooth. Makes enough for 1 lb. of shrimp or 2 - 3 servings.

    2. Shrimp: Melt butter in skillet over medium heat. Add shrimp and stir-fry until just pink (1 - 2 minutes); transfer to serving plate and keep warm.

    3. Add wine to skillet and reduce to 1 tbsp. (3 - 4 minutes); remove from heat and gradually whisk in Norfolk Butter until just incorporated and sauce is slightly thickened. Pour over shrimp, sprinkle with fresh chopped parsley and garnish with lemon slices.

    4. Serve on a bed of linguini or rice.
