Calico Squash

List of Ingredients
- 2 c. yellow squash, sliced
- 1 c. zucchini, sliced
- 1 med. onion, chopped
- 1/4 c. water
- 2 c. cracker crumbs
- 1 stick margarine, melted
- 1 can cream of celery soup
- 1 can sliced water chestnuts
- 1 large carrot, grated
- 1 jar diced pimiento
- 1 tsp. sage
- 1/2 c. mayonnaise
- 1 c. grated cheddar cheese
Instructions
- Steam the squash, zucchini & onion in the 1/4 of water for about 5-6 minutes.
- Combine soup, water chestnuts, carrot, pimento, sage and mayonnaise to make the sauce.
- Mix cracker crumbs with melted butter. Put 1/2 of crumbs in bottom of baking dish.
- Combine sauce with squash/zucchini/onion mixture and spoon over crumbs. Sprinkle with cheese and remaining crumbs.
- Bake at 350° for 30 minutes or until lightly brown.
