    Fancy Fettuccine from Balsam Mountain Inn

    List of Ingredients


    • 8 ounces fettuccine
    • 1 can (14 ounces) artichoke hearts packed in water
    • 1 tbsp. butter
    • 1-1/2 cups sliced fresh mushrooms
    • 1/3 cup (1/2 package) Knorr Leek Soup, Dip and Recipe mix
    • 1/2 tsp. dried basil
    • 1/4 tsp. dill weed
    • 1-1/2 cups milk
    • 1/2 cup grated sharp cheddar cheese
    • 1/2 cup grated fresh parmesan
    • 1 tbsp. flour
    • 1/2 tsp. salt


    Instructions


    1. Cook fettucine according to package directions.

    2. Meanwhile, drain and coarsely chop the artichoke hearts.

    3. Melt butter inskillet, add artichokes and mushrooms. Saute until tender, stirring occasionally.

    4. Add soup mix, basil and dill weed; mix well.

    5. Toss flour with cheese; add milk & cheeses to skillet, stirring until cheese melts & mixture thickens - about 3 or 4 minutes.

    6. Reduce heat and simmer, stirring occasionally, until fettucine is ready.

    7. Drain fettucine, place in serving dish and top with sauce.
