    Stuffed Peppers

    List of Ingredients


    • 6 small bell peppers, red, green or yellow
    • 1 tbsp. olive oil
    • 2 leeks, finely sliced
    • 2 red chiles, finely diced
    • 1 onion, finely chopped
    • 2 cloves garlic, minced
    • 1 - 1-1/2 cups whole kernel corn
    • 1/4 cup dry bread crumbs
    • salt & black pepper to taste
    • a dash or three of cayenne


    Instructions


    1. Slice tops off peppers & clean out seeds & ribs. Trim a sliver from bottom of each to allow it to stand upright, but try not to make a hole in the bottom.

    2. Sauté leeks, chiles, onion & garlic in olive oil until softened; add corn, crumbs & seasoning.

    3. Spoon filling into pepper shells and place in baking dish small enough for peppers to stand upright and not fall over.

    4. Bake about 40-45 minutes at 350F.
