Mexican Fudge

- 1 13-oz. can evaporated milk
- 2 extra-large or jumbo eggs (use 3 if they're smaller)
- 3 or 4 tbsp. flour
- 1 pound pepper jack cheese, grated
- 1 pound sharp cheddar cheese, grated
Instructions
- Beat milk, eggs and flour together
- Layer cheeses in 9x13 pan and pour milk mixture over cheeses.
- Bake 40 minutes at 350F, or until knife inserted in center comes out clean.
- Cut into diamonds or squares.
- Delicious served either hot or at room temperature.
