    Sausage & Salsa Quesadillas

    Azteca tortillas


    List of Ingredients


    • 1/4 lb. pork sausage, cooked & drained
    • 2 cups grated cheddar and/or jack cheese
    • 5 flour tortillas
    • 1/4 cup prepared salsa


    Instructions


    1. Preheat oven to 375F.
    2. Divide sausage & cheese into fifths; place 1/5 of each on one half of each tortilla; top with salsa.
    3. Fold tortillas in half over filling and place on lightly greased baking sheet.
    4. Bake 6-8 minutes, or until edges of tortillas are light golden brown & cheese is melted.
    5. Cut in wedges and serve.


    Final Comments


    (for just the two of us, I don't fool with the oven . . . just fill the quesadillas & fold 'em . . . fry 'em in the skillet for a couple minutes on each side . . . my big skillet will hold two at once, and by the time those are eaten, a couple more can be ready. ~ Shanny)
