Pork Chops with Mushrooms & Brown Rice

- 1-1/2 to 2 cups cooked brown rice
- 3 - 4 tbsp. butter or margarine
- 1/4 cup minced fresh onion
- 1/4 cup minced green pepper
- 8 oz. fresh mushrooms, chopped
- 2 - 3 tbsp. flour
- salt & pepper to taste
- cajun seasoning to taste
- 1 can evaporated milk
- 2 or 3 boneless pork chops
- 1/4 to 1/2 cup grated fresh parmesan
Instructions
- Saute onion, green pepper & mushrooms in butter until tender.
- Add seasonings & flour; blend together and cook 1 or 2 minutes before adding milk. Blend until smooth & cook until thickened. Add a little water if too thick - (the rice will absorb quite a bit of moisture, so it can be a little soupy)
- Add sauce to rice and mix gently.
- Layer in a shallow baking pan with grilled pork chops, so just the edge of the chops shows above the rice mixture.
- Sprinkle with grated parmesan.
- Bake at 350F about 30 minutes, or until heated through and the parmesan browns nice & golden.
- Serve immediately.
