    Three Bean Salad

    Shanny, adapted from a recipe by Marsha Gillett


    List of Ingredients


    • 1/3 cup cider vinegar
    • 1/3 cup red wine vinegar
    • 1/4 to 1/3 cup any light vegetable oil (like canola, etc)
    • 3/4 cup sugar
    • 1/2 tsp. kosher salt
    • 1/4 tsp. fresh ground black pepper
    • 1 or 2 cans cut green beans, drained
    • 1 can cut wax beans, drained
    • 1 can dark kidney beans, drained & rinsed
    • 1 small onion, thinly sliced
    • 1/2 green bell pepper, chopped


    Instructions


    1. Combine first six ingredients and warm over low heat until sugar dissolves completely.
    2. Toss together remaining ingredients in a large bowl and pour warm dressing over all.
    3. Refrigerate for several hours, stirring occasionally.
    4. Keeps several days in the refrigerator.
