    Wilted Lettuce

    List of Ingredients

    1 large bowlful of leaf lettuce, torn up
    3 or 4 sliced green onions, tops & all
    bacon, cooked & crumbled

    DRESSING:
    1 well-beaten egg
    3 tbsp. red wine vinegar
    2 tbsp. sugar or sweetener
    1/3 cup bacon drippings
    salt & pepper to taste


    Recipe

    Toss lettuce, onions & bacon together.

    Combine egg, vinegar and sugar/sweetener; slowly add hot bacon drippings, while whipping to create an emulsion, as you would in making hollandaise. Pour hot dressing over lettuce, salt & pepper to taste, toss lightly. You can do this without the egg, but the thicker dressing coats the greens better.

    Re: dressing - if the hot grease doesn't thicken it, cook over medium heat, beating rapidly with whisk to complete cooking and thickening, but don't overcook.
