Chicken Salad to-die-for

List of Ingredients
- DRESSING:
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 heaping tbsp. dijon mustard
- 1 tsp. sugar (optional)
- 1/4 tsp. salt
- 1/4 heaping tsp. black pepper
- 2-1/2 tsp. lemon juice
- ----------
- FILLING:
- 1-1/2 cups shredded cooked chicken
- 1/2 cup finely chopped celery
- 2 tbsp. finely chopped green onions
- 1/4 cup chopped toasted pecans
- dressing from above
Instructions
- Combine dressing ingredients, mix well & store refrigerated.
- Combine all ingredients and chill at least two hours, but preferably 4-6 hours before serving.
- For each sandwich:
1 thick slice sweet, dark, whole-grain bread (or your favorite)
1/2 cup chicken salad
3 slices crisp-cooked bacon
1 thick slice provolone or white american cheese
Spread bread with chicken salad; run under the broiler for about a minute until heated, but not bubbly. Remove from broiler & place bacon & cheese on top. Return to broiler just long enough to melt the cheese, and serve immediately.
