    List of Ingredients


    • 1 3 or 4-lb. boneless pork butt roast
    • cajun seasoning as needed
    • 1/2 to 3/4 cup minced fresh onion
    • 2 tsp. minced fresh garlic
    • 1/2 cup apple cider vinegar
    • 1/2 cup chili sauce
    • 1/2 cup catsup
    • 1/2 to 3/4 cup brown sugar
    • 1/4 c worcestershire sauce
    • 1 or 2 bay leaves


    Instructions


    1. Rub roast with cajun seasoning and place in crockpot. Top with minced onion & garlic. Cook on low for 5 or 6 hours.
    2. Make a sauce by combining next five ingredients & blending until smooth. Warm the sauce & pour it over the pork roast. Add the bay leaf also. (warming the sauce before adding it prevents loss of heat in the crockpot, which takes a long time to recover)
    3. The roast will have juiced a lot, so stir the sauce to blend it well with the meat juices.

    4. Continue cooking another 5 or 6 hours, or until the roast is falling apart.
    5. Remove roast and bay leaf from crockpot; using two forks, shred the meat and return the shredded meat to the pot, mixing it well with the sauce (pitch the bay leaf). Continue cooking with the lid off to reduce the sauce.
    6. Serve on toasted buns.
    7. (toasting the buns by buttering them and toasting on a griddle helps keep the filling from soaking up the bread quite so fast.)


    Final Comments


    For spicier pork, add a pinch of cayenne or a splash of tabasco . . . any of your favorite "hot" stuff!
