Baked Potato Soup

List of Ingredients
- 7 Cups milk
- 2/3 cup butter
- 2/3 cup flour
- 12 slices bacon, cooked
- 3-4 large potatoes, baked and cubed
- 8 ounces sour cream
- 1-1/2 cups shredded cheddar cheese
- 4 green onions, chopped OR 1/2 cup chopped white onion, chopped
- salt and pepper to taste
Instructions
- In a large saucepan, melt the butter, then saute the onions until tender.
- Stir in flour until smooth.
- Add milk and bring to a boil, then simmer until the mixture starts to thicken, stirring constantly.
- Add the potatoes and simmer for 5 minutes, stirring constantly.
- Add the sour cream, bacon, and cheese.
- When cheese is melted, soup is ready to serve.
- This is a very thick soup so if you don't like yours quite so thick, just add a little more milk.
