    Baked Potato Soup

    List of Ingredients


    • 7 Cups milk
    • 2/3 cup butter
    • 2/3 cup flour
    • 12 slices bacon, cooked
    • 3-4 large potatoes, baked and cubed
    • 8 ounces sour cream
    • 1-1/2 cups shredded cheddar cheese
    • 4 green onions, chopped OR 1/2 cup chopped white onion, chopped
    • salt and pepper to taste


    Instructions


    1. In a large saucepan, melt the butter, then saute the onions until tender.

    2. Stir in flour until smooth.

    3. Add milk and bring to a boil, then simmer until the mixture starts to thicken, stirring constantly.

    4. Add the potatoes and simmer for 5 minutes, stirring constantly.

    5. Add the sour cream, bacon, and cheese.

    6. When cheese is melted, soup is ready to serve.

    7. This is a very thick soup so if you don't like yours quite so thick, just add a little more milk.
