Potato Soup (Atomic potato soup!)

List of Ingredients
- 5 medium carrots, scraped & sliced
- 2 large ribs celery, sliced
- 1/2 large onion, diced
- 2 or 3 cloves garlic, minced
- 2 large potatoes, scrubbed or peeled & diced
- 1 can whole kernel corn, drained
- 1/4 to 1/2 tsp. crushed red pepper
- 1 tsp. salt
- water to cover
- 1½ - 2 inch slab of Velveeta, diced
- 1 can evaporated milk
- cooked crumbled bacon
Instructions
- Combine first nine ingredients, bring to boiling, reduce heat & cook until vegetables are tender.
- Add velveeta & keep warm until cheese melts.
- Just before serving, add evaporated milk; prevent from boiling after addition of milk, or the soup could curdle.
- Garnish with crumbled bacon.
