Pumpkin Mushroom Soup

List of Ingredients
- 1 lb. fresh mushrooms, sliced
- 1 large onion, chopped
- 2 sticks butter
- 3 qts. chicken stock
- 3/4 c. flour
- 1 large can packed pumpkin
- 1 tsp. salt
- 1/2 tsp. black pepper
- 1/4 tsp. cayenne pepper
- 1/4 c. honey
- 1 tbsp. curry powder
- 2 c. cream or half & half
Instructions
- In a large Dutch oven, saute mushrooms and onions in butter.
- Add flour and cook about 3 minutes.
- Add stock and cook until thickened.
- Add pumpkin, salt, black pepper, cayenne pepper, honey and curry powder.
- Simmer about one hour.
- Add cream and heat through.
