    Pumpkin Mushroom Soup

    List of Ingredients


    • 1 lb. fresh mushrooms, sliced
    • 1 large onion, chopped
    • 2 sticks butter
    • 3 qts. chicken stock
    • 3/4 c. flour
    • 1 large can packed pumpkin
    • 1 tsp. salt
    • 1/2 tsp. black pepper
    • 1/4 tsp. cayenne pepper
    • 1/4 c. honey
    • 1 tbsp. curry powder
    • 2 c. cream or half & half


    Instructions


    1. In a large Dutch oven, saute mushrooms and onions in butter.
    2. Add flour and cook about 3 minutes.
    3. Add stock and cook until thickened.
    4. Add pumpkin, salt, black pepper, cayenne pepper, honey and curry powder.
    5. Simmer about one hour.
    6. Add cream and heat through.
