Steak Soup

List of Ingredients
- 1-1/2 lbs. ground beef
- 2 cups chopped onion
- 1 cup sliced carrots
- 1 cup diced celery
- 1 tbsp. minced garlic
- 3 cans chicken broth
- 1 pint canned tomatoes
- 2 tbsp. worcestershire sauce
- 1 tsp. tabasco sauce
- 1/2 tsp. black pepper
- ----------
- 1/4 cup butter or margarine
- 1/2 cup flour
Instructions
- Brown the ground beef in a large kettle, adding onion, carrots, celery & garlic and cooking until vegetables are almost tender - 10-12 minutes.
- Pour off grease if necessary.
- Add broth, tomatoes, worcestershire, tabasco and pepper; bring to boiling, reduce heat and cook 15 minutes.
- As the soup cooks, melt the butter in a small skillet, add the flour and cook over medium/high heat, stirring constantly, until flour turns a deep brown color.
- Whisk it into the soup; simmer 15 minutes longer.
- Makes 6 - 8 servings.
