Black Eyed-Pea Salad

List of Ingredients
2 Cans black eyed peas, rinsed ad drained
1 can diced tomatoes, drained
1 4oz chopped and drained Pimentos
1/4 Cup Olive Oil
1 Clove finely chopped Garlic
3 TBSP Balsamic Vinegar
2 TBSP finely chopped red Onion
2 TBSP chopped fresh Parsley
2 tsp chopped pickled jalapeno pepper
1 tsp white Sugar
1/4 tsp salt, plus more to taste if necessary
Place all ingredients in a large salad bowl. Toss to combine. Recipe
