Made with Aloha from the Howe Family, Banana Pineapple bread is one of the items put into a welcome basket when new squadron members arrive on the island. I like that this makes a large batch because it freezes well . I always have some on hand wherher it is for a new arrival or when friends drop in. I knew it was a hit when one of our newly welcomed ohana told me her two-year old son loved it..it passed the keiki test!
List of Ingredients
4 Cups All purpose flour
1 Tbsp baking powder
1 1/2 tsp baking soda
1 1/2 tsp salt
2 sticks butter, softened
2 cups sugar
4 large eggs
1 (8oz) can crushed pineapple, undrained
1/2 cup sour cream
1 cup mashed, ripe bananas (About 2 medium)
Raw sugar or Granulated sugar for toppingRecipe
Combine flour, baking powder, baking soda, and salt. Set aside. Cream Butter and sugar until light and fluffy; mix in eggs. Add flour mixture alternating with pineapple, sour cream and bananas, and mix until combined.
Pour into lightly greased regular size loaf pans. Sprinkle with sugar and bake at 350 for 45 minutes.
