    List of Ingredients




    2-1/4 cups water
    1 tsp salt
    1 cup cornmeal
    1/2 tsp pepper
    1 TBSP butter
    1 cup whole milk
    4 Large eggs , well beaten
    1-1/2 cups shredded sharp cheddar cheese
    3 TBSP scallions, chopped

    Recipe



    In a large saucepan, boil the water, add salt and lower heat to simmering. Add the cornmeal while stirring with a wire whisk and continue to cook , stirring constantly for about 2 minutes or until mixture is smooth. Remove from the heat and whisk in pepper, butter and milk. When mixture is smooth, add the eggs and beat with a whisk. Stir in the cheese and scallions. Pour the mixture into a buttered 2 quart casserole and bake at 400 degrees for 40 minutes or until a toothpick comes out clean.

    Serves 6-8
