    (I usually have sausage on hand instead of ham- so I substitute browned sausage for the ham---I also always DOUBLE everything because it is ALWAYS finished)

    "When I prepare this meal, I brown a lb of sausage and use in place of the cup of diced ham. I also always Double the recipe. However I am submitting this as written for you to see for yourselves."~Sharkie

    List of Ingredients




    1/4 Cup Chopped Onion
    1/4 Cup (1/2 Stick) Butter or Margarine
    2 Medium Potatoes, Peeled and Finely Chopped
    1 tsp Water
    1/4 tsp salt
    6 Eggs
    1/4 tsp Pepper
    1/4 tsp Salt
    1 Cup Diced Cooked Ham

    Cook the Onion in the butter in a skillet until tender. Add the potatoes,water and 1/4 tsp salt. Cook for 10 minutes, Stirring Occasionally.

    Beat the eggs, milk, 1/4 tsp salt and pepper in a bowl. Stir in the ham. Pour over potato mixture.

    Cook over medium heat until the mixture begins to set; do not stir. Lift the cooked egg mixture, allowing the uncooked portion to flow under the cooked portion. Cook for 4 minutes or until completely set.

    Serve Immediately.

    Yield: 4 Servings.
