    3 cups finely shredded raw potatoes
    1 Tbsp grated onion
    1 tbsp chopped parsley
    ½ tsp salt
    ¼ tsp black pepper
    3 Tbsp butter, bacon drippings or other fat

    Combine all the ingredients, except the fat. Put the fat into a heated heavy 9" fry pan. Spread potato mixture over the bottom of the pan and, with a spatula press it down to form a cake. Sauté slowly, shaking the potatoes from time to time to keep from sticking. When bottom is brown, cut potato layer in half and turn each with two spatulas.

    Pour ¼ cup cream over the potatoes. Brown the second side and serve immediately.
