    Stuffed Banana French Toast

    Take just a little extra time for breakfast that tells your family "Your Special"

    List of Ingredients




    4 thick slices country style bread
    1 banana, thinly sliced
    4 eggs
    1/3 cup milk
    1 tsp sugar
    3/4 tsp vanilla extract
    1/8 tsp nutmeg
    1/8 tsp salt

    Recipe



    Cut a pocket in the side of each slice of bread without cutting all the way through. Stuff 6 banana slices into each pocket; set aside.

    Whisk together remaining ingredients in a shallow bowl. Soak bread slices in mixture, turning once. Heat a lightly greased skillet over med low heat.

    Cook bread until golden, about 2 minutes on each side.

    Transfer to an foil lined 13x9 baking pan that has been sprayed with nonstick vegetable spray; bake at 350 for 8 minutes.

    Serve with Warm Maple Pecan Syrup. Serves 4

    MAPLE PECAN SYRUP:

    1 cup Maple syrup
    1 Tbsp Butter
    1 cup pecan halves
    4 inch cinnamon stick
    1 tsp vanilla extract

    combine ingredients in a small saucepan over med heat; simmer for 5 minutes. Discard cinnamon stick.
