How to Prepare Pinto Beans

WASH:
In clean water, remove any foreign objects. a colander is handy for washing the beans.
SOAK:
At least 8 hours. (Preferably 24 hours). Keep beans covered with clean water. Use no seasoning while soaking.
Do not add salt until beans are tender.
HIGH ALTITUDE ADJUSTMENT:
Recipes in this book are designed for an alt. of 6K above sea level. In most cases the only adjustment required would be a few minutes less cooking time for lower alt.
If the recipe calls for prepared cake mixes, follow instructions for alt. adjustment accompanying the mix.
If the recipe calls for baking powder, increase about 1/2 tsp for each 2500 feet alt. under 6K .
If recipe calls for sugar. Increase sugar approx. 1/4 tsp for each 2500 ft alt under 6K feet and decrease liquid slightly.
