    Cotechino Italian Sausage pre-cooked
    Lentils
    Italian Lentils
    1 package of lentils (500g – 18 oz).
    1 package of pre-cooked Italian Sausage
    1 can of tomatoes (250 g - 9oz).
    6 ripe tomatoes.
    2 cloves of garlic.
    3 stalks of celery.
    2 medium-sized carrots.
    2 potatoes.
    1 sprig of fresh parsley.
    Extra virgin olive oil 6 tablespoons
    Salt (to taste)

    Preparation:
    -Place the sausage (without unwrapping it from the casing) in a pan of cold water, and let it cook for 20 minutes (or follow the instructions on the package).
    -Wash and dice the carrots, celery, potatoes, and tomatoes.
    -Put the olive oil into a medium saucepan and the whole garlic cloves for a few minutes, to flavor the oil.
    -Remove the garlic, add the carrots and celery and cook for 5 minutes.
    -Add both the fresh and canned tomatoes, season with a pinch of salt and let cook for another 10 minutes.
    -Wash the lentils thoroughly and leave them to soak in the water for a few minutes.
    -Add the lentils to the pan, stir and add water to completely cover all the ingredients.
    -Cook over low heat for about 40 minutes, occasionally adding a bit of water.
    -Meanwhile, remove the sausage from water, remove the casing and cut into ½ inch thick slices.
    -Once the lentils are almost done, lay the slices of sausage in the pan, add a drizzle of extra virgin olive oil, a sprinkle of finely chopped parsley serve hot and enjoy!
