    Line a 9" pie pan with pastry, brush with slightly beaten egg white, put in the uncooked filling and bake in a pre-heated, 450º, oven for 10 minutes. Then, reduce heat to 300º and bake until firm, 45 to 50 minutes. Serve warm or chilled.

    FILLING:

    4 eggs
    ½ cup sugar
    1.4 tsp salt
    3 cups milk, scalded
    1 tsp vanilla

    Beat the 4 eggs until well blended. Caramelize the sugar (rub a heavy frying pan lightly with butter. Put in the sugar and set the pan over moderate heat. Stir constantly until the sugar melts.) and stir into the hot milk. Continue stirring until the sugar is integrated. Add salt and vanilla. Stir again and pour into the pie pastry.
