    I got this recipe from my Mom who got it from her Mom. It's a family favorite and is expected at every family gathering. It's always good but if you can time it so it's still warm when you serve it, it's absolutely wonderful!


    List of Ingredients


    • 3 eggs beaten until frothy
    • 1 cup oil
    • 2 cups sugar
    • 1 tsp. Vanilla
    • 2 cups sifted flour
    • 1 tsp. Baking soda
    • ½ tsp. Salt
    • 2 tsp. Cinnamon
    • 4 cups peeled apples chopped fine
    • 1 cup nuts (pecans)
    • TOPPING:
    • 6 oz. Philly Cream Cheese
    • 1 stick butter
    • 1 tsp. Vanilla
    • ¾ lb. Powdered sugar


    Instructions


    1. Set out topping ingredients so they can soften.

      Preheat oven to 350º

      Grease & flour a 9 x 13 inch cake pan.

      Combine eggs, oil, sugar & vanilla.
      Gradually add flour, soda, salt & cinnamon.
      Blend well.
      Fold in apples & nuts.

      Bake in 350º for 40 – 45 min.'s

      Prepare Topping while cake is baking and Frost immediately after removing cake from oven.

      Topping
      6 oz. Philly Cream Cheese
      1 stick butter
      1 tsp. Vanilla
      ¾ lb. Powdered sugar

      Blend together at room temperature.

      Add to hot cake as soon as it is removed from the oven.

      Notes - The original recipe calls for 6 oz. of cream cheese in the topping but I always use a whole big pkg. (I think it's 8 oz.) with no noticable change in the results. Just a little more yummy topping!

      I prefer Granny Smith apples but any good baking apple would do fine I'm sure.

      Also, use any "nut" that you like. Or no nuts at all. I do that occasionally for my DH who doesn't like any kind of nuts.
