Chili Relleno Casserole

4 7 oz. cans whole green chiles (she recommends mild)
1 lb. monterrey jack cheese, in a brick
5 eggs
1 1/4 cups milk
1/4 cup flour
1/2 tsp salt
dash black pepper
4 cups grated cheddar cheese (1 lb package)
1. Slit chiles lengthwise on one side, remove seeds and drain. Flatten the chiles and place in 9x13 pan.
2. Slice monterrey jack into 1/4-inch slices and lay on the chiles.
3. Mix eggs, milk, flour, salt, and pepper vey well and pour over chiles and cheese.
4. Sprinkle the top with grated cheddar.
5. Bake uncovered at 350* for 45 minutes.
When we had this at the reunion, it was good, not spicy at all IMO. I tried to make it at home, but only had a 7x11 pan, so I ran out of room and it didn't come out right. Personally, next time I'm going to add some Tabasco to the milk mixture for a little more spice.
Speakin' of adding things, I wonder about adding some chicken or ground beef (cooked) to the mix. I bet it'd come out good.
Edit: When I made mine, I used 8 4-oz cans of chiles. Worked great, and I did a layer of chiles, layer of cheese, chiles, more cheese.
