Creamy Autumn Potatoes

1 tbsp butter
1/2 c chopped onion
1/2 clove minced garlic (1/2 to 1)
1 pkg cream cheese (3oz) cubed
frozen hash brown potatoes (3 to 4 cups)
1/3 c shredded cheddar cheese
1 can cream of celery soup (10 1/2 oz)
Preheat oven to 400°F. Butter a 1 quart casserole dish. In 1 quart sauce pan, sauté in butter over medium heat, the onions and garlic until tender. Stir in soup and cream cheese. Cook, stirring constantly, until smooth and hot. In casserole, alternately layer potatoes and cheese sauce, ending with a sauce layer. Cover and bake 45 minutes or until sauce is bubbly and potatoes are tender. Remove from oven and sprinkle with shredded cheese. Makes 4-5 servings
There is no getting around it. These are to die for. They were a huge hit when I had them for Christmas. Recipe
