Crockpot Breakfast Casserole

List of Ingredients
1 32 oz. bag of frozen southern style hashbrown potatoes (I use O'Brien Style with bell peppers and onion)
1 lb. of bacon cut into pieces, fried and drained (I've also used sausage or ham)
1/2 c. diced onions (omit if using O'Brien style hashbrowns)
3/4 lb. cheddar cheese, shredded
1 doz. eggs
1 c. milk
1/2 tsp. dry mustard
salt & pepper
Layer the frozen potatoes, bacon, onions, and cheese in the crockpot in two or three layers. Finish up with cheese. Beat the eggs, milk and mustard, salt & pepper together. Pour over the whole mixture. Cook on low for 6 to 8 hrs.
*Works best in one of those big oval crockpots.
