    Serves 4

    List of Ingredients




    1/4 cup + 2 TBSP Sugar
    1/4 Cup water
    3 squares bittersweet chocolate , chopped
    2 egg yolks, beaten until thick and lemon colored
    2 egg whites, pasteurized
    3/4 cup whipping cream

    Recipe



    Place all but 2 TBSP of the sugar, water and chocolate into a small saucepan.

    Cook over low heat, stirring until sugar dissolves and chocolate melts. Stir the chocolate mixture slowly into the egg yolks. Put this mixture back into the pan and cook over low heat, stirring for 1 minute.

    Remove from heat and cool. Beat egg whites until soft peaks form. Add the 2 TBSP sugar gradually and beat until stiff peaks form. Blend the chocolate mixture into the egg whites.

    Beat the whipping cream and fold it into the chocolate egg white mixture. Pour into individual serving dishes and chill.
