    Cranberry Nut Jello Salad

    6oz pkg raspberry jello
    2 c. boiling water
    1 c pineapple juice
    16oz can wholeberry cranberry sauce
    1 c diced apples (any kind will work but green ones look festive during the holidays)
    1 c crushed pineapple
    2/3 c chopped pecans

    Dissolve jello in boiling water for 2 minutes. Add cranberry sauce (use a potato masher to break it up easier). Add the pineapple juice and chill until thickened. This usually takes a couple of hours. Add the remaining ingredients after it has thickened enough to suspend the apples.

    Note: I drain the crushed pineapple to get the juice. I think it get too runny if you add the juice and the pineapple with juice.
