    List of Ingredients




    CRUST:
    1 cup all purpose flour
    1/3 cup butter , softened
    1/4 cup confectioner's sugar

    TOPPING:
    1 Cup Sugar
    2 Eggs
    2 TBSP all purpose flour
    2 TBSP lemon juice
    1/2 tsp lemon extract
    1/2 tsp baking powder
    1/4 tsp salt
    Confectioners' sugar

    Recipe



    Combine crust ingredients and pat into 8 inch square baking pan. Bake at 375 for 15 minutes.


    Meanwhile for topping,combine sugar, eggs, flour, lemon juice, extract, baking powder and salt in a mixing bowl. Mix until frothy; pour over crust.

    Bake at 375 for 18-22 minutes or until light golden brown. Dust with confectioners' sugar.

    Serves 9
