Chicken and Noodles
This recipe was taken from a cookbook PatsyJune's grandmother received as a wedding gift in 1918. Everyone who has tasted them wonders what I did to make them taste so good.
1 stewing hen
1 large carrot
1 stalk of celery
1 large onion, roughly chopped
4 whole cloves
1/2 tsp pepper
water to cover chicken
Put the chicken, carrot, celery and onion in a large pot. You do not need to scrape the carrot or clean the celery.
Tie the cloves in a cheesecloth bag. I use an old tea strainer my grandmother had. DO NOT USE GROUND CLOVES!
Cover with water. Add pepper.
Bring to a boil, then turn heat down, put a lid on the pot and simmer until the chicken is falling off the bones.
Remove the chicken, carrot, celery and cheesecloth bag.
Bone the chicken and put the meat in the pot.
Mash the carrot and put back in the pot.
Throw out the celery and cloves.
Bring to a rolling boil and add your choice of noodles or dumplings.
Turn down heat and cook until noodles are tender.
Final Comments
The cloves are what adds the extra punch to the recipe.
