Broccoli Cheddar Soup

List of Ingredients
- 3/4 cup onion, finely chopped
- 3/4 cup butter
- 3/4 cup all purpose flour
- 1 tsp salt
- 1 tsp black pepper
- 3 Cups Chicken Broth
- 4 1/2 cup milk
- 3 cups fresh broccoli, chopped and cooked
- 3/4 cups cheddar cheese, shredded
Instructions
- In a saucepan, saute the onion in butter until tender.
- Stir in flour , salt and pepper.
- Cook and Stir until smooth and bubbly.
- Add broth and milk all at once.
- Cook and stir until mixture boils and thickens.
- Add broccoli .
- Simmer, stirring constantly until heated through.
- Remove from heat.
- Stir in cheese until melted.
