Sausage Cabbage Soup

List of Ingredients
1 med onion, chopped
1 Tbsp Vegetable oil
2 med carrots, sliced thin
1 celery rib, sliced thin
1 tsp caraway seed
2 cup water
2 cup chopped cabbage
1/2 lb Polish sausage
1 (14 1/2oz) can diced tomatoes with juice
1 Tbsp brown sugar
1 can white kidney beans, rinsed & drained
1 Tbsp vinegar
1 tsp salt
1/4 tsp pepper Recipe
In a 3-quart saucepan, saute onion in oil until tender. Add carrots and celery;saute for 3 minutes. Add caraway seeds; cook for 1 minute. Add water, cabbage, sliced sausage,tomatoes and brown sugar, then bring to a boil. Reduce heat;cover and simmer for 15 to 20 minutes. add beans, vinegar, salt and pepper. Simmer for 5 to 10 minutes more.
