Split Pea Soup w/ Ham

Meaty and Satisfying, the spinach adds a rich flavor to the broth.
List of Ingredients
1 lb dried green split peas
5 cups chicken stock/broth
5 cups water
1 ham bone with meat, or 2 smoked ham hocks
2 stalks celery with leaves, diced
3 TBSP fresh parsley, chopped
1/2 tsp dried tarragon
4 TBSP sweet butter
1 cup carrots , peeled and diced
1 cup onion, diced
1 cup fresh spinach, finely chopped
freshly ground pepper to taste Recipe
Rinse the peas. Combine stock and water in a large pot and add the peas; bring to a boil. Add the ham bone, celery, parsley and tarragon. Reduce heat and simmer, partially covered, about 45 minutes. In a seperate pan, melt the butter and saute the carrots and onion until soft. Add to the soup. Stir in the spinach and simmer , partially covered, 30 minutes. Remove the ham to the soup. Season to taste. Serves 6
