List of Ingredients
1 Large Onion, chopped
1/2 tsp butter
1 Ham Hock
3 Baking Potatoes, diced
1 tsp dried or 2 tsp fresh parsley, chopped
2 tsp instant chicken broth granules
8oz box cubed Velvetta cheese
2 cups ham, cooked and cubed
1 pint half and half
8oz can succotash Recipe
Saute onion in butter. In soup pot, place ham hock in water to cover. Add potatoes, onion and seasonings. Simmer for 20 minutes, then remove ham hock and mash potatoes into the liquid with a large spoon or potato masher . Add cheese and simmer until cheese is melted and soup is thickened. Add ham, cream and succotash.
Simmer 10 additional minutes.
