    Chilly-Day Beef Barley Soup

    Recipe Introduction


    The first cold day of fall, I put on a pot of this soup to simmer and things seem much warmer! It's delicious served with crusty bread.

    List of Ingredients




    1 lb beef eye of round, diced
    1 Tbsp oil
    1 cup celery, chopped
    1 cup carrots, peeled and chopped
    1 cup onion, chopped
    28 oz can stewed tomatoes
    3/4 cup pearled barley, uncooked
    9 cups water

    Recipe



    In a large pot over med heat, brown beef in oil; drain. Add remaining ingredients; simmer over low heat for 1 1/2 to 2 hours.

    Makes 6 servings
