Ham and Corn Chowder

We ate with warm crusty bread and it was yummy.
I have also used bacon in this. Just fry the bacon crisply and add toward the end. I did use some of the bacon fat when I sauted the onion! In fact, MM prefers it with bacon.
List of Ingredients
2 Tbs. olive oil
1 Tbs. unsalted butter
1 medium onion, diced
2 ribs celery with tops, diced
1-2 cloves garlic, smashed and diced
3-4 cups chicken stock (I used the large paper container)
3 cups frozen corn
1# pkg. frozen hash browns, more or less
1 can evaporated milk
1 cup half and half--optional
1 cup diced ham, again, more or less
salt/pepper, other seasonings as desired
In a heavy pan, melt the butter with the olive oil. When heated, add the diced onion and celery. Saute over medium heat until translucent. Add the chopped garlic and cook for a minute or two.
Add the chicken broth, hash brown potatoes and corn. Cook over medium heat until all are heated through and the potatoes have a chance to cook a little. Season with salt/pepper, and other seasonings as desired. I used some Janes Crazy Mixed Up Salt, and more garlic salt.
Let simmer for 10 minutes or so. Add the canned milk and ham, heating through. Taste for seasonings. Add the half and half if desired, and warm through
