    Quick Black Bean Soup

    List of Ingredients




    1 C Diced Onion
    2 Cloves, Minced Garlic
    1 1/4 C Beef Broth
    2 15 oz Cans Black Beans
    1 15 oz can Diced Tomatoes
    1 C diced, peeled potato
    1/2 tsp dried Thyme
    1/2 tsp dried Cumin
    1/4 to 1/2 tsp Tabasco Sauce

    Recipe



    Combine Onion, Garlic, and 1/4 Cup broth in large pot.

    Simmer until Onions are soft, about 5 minutes.

    Add 1 Cup Broth, black beans and thier juice, tomatoes, potatoes, thyme and cumin.

    Bring to a simmer; Cover and cook until potatoes are tender, about 25 minutes.

    Thin soup as necessary with more broth.

    Add Tabasco and/or sour cream if desired.

    Stir and Serve.
