    List of Ingredients





    10~12# Potatoes (Use any kind that will mash up well)
    2 Cans Cream of Mushroom Soup w/ Roasted Garlic (Add crushed garlic to taste if using regular C/Mushroom Soup)
    3 Cans Cream of Chicken Soup
    3~4 Heaping TBS Texas BBQ Rub
    2 Cups Sour Cream
    1 Btl Vlassic Roasted Red Peppers (Drained/chopped)
    1# Sausage, Quartered and diced about 3/8" (I use Smoked Turkey Sausage but whatever you like)
    1 Pkg (2 cups) Shredded Cheese (I use Mexican 4 Cheese but any you like)
    1# Frozen Green Peas
    1# Chopped Diced Onions
    Real Bacon Bits...I use about 1/2 a small Btl.
    Salt/Black Pepper to taste..

    First, scrub the potatoes and leave the skins on...While they are boiling, mix together the "Sauce" All the above items but only 1/2 of the shredded cheese...The remainder will be sprinkled on top...

    Drain and mash the potatoes...I use a big deep aluminum bread delivery tray..."Sauce" the Potatoes when they are still hot as they will absorb better...Just mix in all the sauce and make sure it's evenly blended...When it's all mixed together, I use disposable 12# aluminum roaster pans...Put the mix in and the reserved shredded cheese on top...Dust that w/ Paprika...Bake in a slow oven...250~275 for an hour or so...Just to heat through and melt the cheese...

    Notes:

    While I'm boiling the Potatoes, I sweat the sausage in my Microwave for about 2~3 minutes...I also cook the frozen green peas and diced/chopped onions in the microwave before adding them to the sauce...Keeping them pretty firm for texture...
