List of Ingredients
- 2 Cup Blackeyed Peas
- 1 Ham Bone
- 5 Garlic Cloves, chopped
- 1 Large chopped Onion
- 2/3 Bell Pepper, Chopped
- 1 20 oz can tomatoes
- several bacon slices
- 1 1/2 cup uncooked rice
Instructions
- Cook blackeyed peas with leftover hambone.
- Prepare rice according to package.
- Chop Garlic, Onion, and Bell Pepper. Divide in half.
- Add Tomatoes and half of the chopped garlic onion and peppers to the peas.
- Cut bacon into small pieces and fry with other half of the garlic onion and peppers, then add to the peas.
- Add rice a few minutes before serving.
Final Comments
Serve with fried corn pone or hush puppies
