    List of Ingredients


    • 2 Cup Blackeyed Peas
    • 1 Ham Bone
    • 5 Garlic Cloves, chopped
    • 1 Large chopped Onion
    • 2/3 Bell Pepper, Chopped
    • 1 20 oz can tomatoes
    • several bacon slices
    • 1 1/2 cup uncooked rice


    Instructions


    1. Cook blackeyed peas with leftover hambone.
    2. Prepare rice according to package.
    3. Chop Garlic, Onion, and Bell Pepper. Divide in half.
    4. Add Tomatoes and half of the chopped garlic onion and peppers to the peas.
    5. Cut bacon into small pieces and fry with other half of the garlic onion and peppers, then add to the peas.
    6. Add rice a few minutes before serving.


    Final Comments


    Serve with fried corn pone or hush puppies
