Tex-Mex Cauliflower

We love this one. It came from an old junior league cookbook.
List of Ingredients
1 head cauliflower, cut into bite-sized pieces
1- 4 oz. can chopped mild green chilies, drained
1- 4 oz. jar chopped pimento, drained well (opt.)
3 cups shredded jack cheese, or a combination of plain jack and pepperjack
2 cups whipping cream
salt and pepper
1/2 stick butter, softened
Butter a 9x13 baking dish liberally. Place cauli. pieces evenly in pan. Sprinkle with chilies and pimento. Sprinkle with cheese, salt and pepper. Pour cream over all. Dot with remaining butter. Bake covered for 30 minutes, then uncovered until lightly browned. Allow the dish to cool 10 minutes or so before serving.
