    Perfectly sweet/tart quick bread

    List of Ingredients




    2 1/2 cups flour
    1 1/2 tsp. baking powder
    1/2 tsp baking soda
    1/2 tsp salt
    1/2 c butter or margarine softened (1 stick)
    1 1/4 cup sugar
    2 tsp freshly grated lemon peel
    2 large eggs
    1 container 8 oz sour cream
    1 tsp vanilla extract

    Recipe



    Preheat oven to 350 degrees. Grease and flour 9 x 5 metal loaf pan.

    In medium bowl stir flour, baking powder, baking soda and salt.

    In large bowl, beat butter until smooth with electric mixer. Add sugar and peel, beat until creamy.

    Reduce speed to low and add eggs one at a time beating after each addition until well blended. scraping bowl occasionally. Add flour mixture alternatively with sour cream, beginning and ending with flour mixture.

    Spoon batter into prepared pan. Bake 1 hour 5 minutes or until toothpick inserted in center of loaf comes out clean.

    Cool in pan on wire rack 10 minutes, Remove from pan cool fully on rack.
