Farmer's Breakfast Potatoes

3 cups frozen hash browns
1 cup shredded monterey jack cheese
1 cup cooked ham diced (or bacon)
1/4 cup scallions sliced
4 eggs
12 oz. can evaporated milk
salt and pepper to tasteRecipe
Place hash browns in an 8 x 8 dish. Sprinkle with cheese, ham (or bacon) and scallions).
In a mixing bowl beat eggs, milk, salt and pepper, pour over hash browns.
Cover and refrigerate overnight. In the morning leave at room temperature for 30 minutes.
Bake at 350 degrees for 55 - 60 minutes.
